Smack Ya Sweet Buttermilk Wings
​ “Where the sweet talks first… but the heat gets the last word.”
 

These wings may be soaked in buttermilk and brushed with honey, but don’t let that fool you—they bring the heat like a July sunset on the lake. Crispy, golden, and glazed in a sticky-sweet hot honey sauce, this is comfort food with a kick and a whole lotta Okie attitude. Perfect for tailgates, backyard hangs, or any time you want to impress the neighbors without breakin’ a sweat (well… except while eatin’ ’em)

​Ingredients:

  • 3–4 lbs whole chicken wings

  • 2 cups buttermilk

  • 1 cup all-purpose flour

  • 2 tbsp OFD Grillin' Dust (your house rub)

  • Lard or neutral oil for frying

  • 1 stick butter

  • 1/2 cup Trappy’s Louisiana Hot Sauce

  • 2 tbsp OFD local honey (plus more to drizzle)

  • Celery sticks, carrot sticks, blue cheese dressing (for serving)

Prep Time: 15 min (+ Overnight Soak)
Cook Time: ~2.5 hours (smoke + fry)
Total Time: ~3 hours
Yield: Serves 6 hungry Okies

 

Equipment Needed

  • Smoker

  • Cast iron Skillet

  • Mixing bowls

  • Tongs

Instructions

  • Soak it down:
    Toss wings in a large bowl with buttermilk. Cover and refrigerate overnight.

  • Smoke ‘em like a legend:
    Fire up the smoker to 250°F. Pull wings from the buttermilk and place directly on the smoker rack. Smoke low and slow for 2 hours. They'll get kissed with just the right amount of smoke.

  • Dust & fry ‘em proper:
    Mix flour and OFD Grillin' Dust in a bowl. Dredge the smoked wings lightly until coated.
    Heat lard or oil in a deep cast iron skillet to 350°F. Fry wings in batches until golden brown and crispy, about 3–5 minutes. Drain on paper towels.

  • Bring the heat bath:
    In a saucepan, melt the butter and add Trappy’s Hot Sauce. Let it bubble until it yells “get ready.” Drop wings into the sauce and roll ‘em until they scream with joy.

  • Honey finale:
    Plate the wings and give them a final drizzle of OFD local honey for that sweet sticky shine.

  • Serve with honor:
    Bring to the table with crisp celery, carrots, and a vat of blue cheese dressing. Tongues will sizzle. Hearts will thank you.
