Fresh Spinach Artichoke Dip

  Ingredients

  • 1 pound fresh baby spinach

  • 1 (14-ounce) can artichoke hearts, drained and chopped

  • 8 ounces cream cheese, softened

  • ½ cup sour cream

  • ½ cup mayonnaise

  • 2 cloves garlic, minced

  • ¾ cup grated Parmesan cheese

  • 1 cup shredded mozzarella cheese, divided

  • Salt and freshly ground black pepper, to taste

  • Olive oil, for sautéing

   Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish or similar-sized oven-safe dish.​

  2. Prepare Spinach: In a large skillet, heat a drizzle of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2–3 minutes. Remove from heat and let it cool slightly. Once cooled, squeeze out any excess moisture and chop coarsely.​

  3. Mix Ingredients: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Stir in the minced garlic, chopped artichoke hearts, sautéed spinach, Parmesan cheese, and half of the mozzarella cheese. Season with salt and pepper to taste. Mix until well combined.​

  4. Assemble Dip: Transfer the mixture to the prepared baking dish, spreading it evenly. Sprinkle the remaining mozzarella cheese over the top.​

  5. Bake: Place the dish in the preheated oven and bake for 20–25 minutes, or until the dip is hot and bubbly, and the cheese on top is melted and slightly golden.​

  6. Serve: Remove from the oven and let it cool for a few minutes. Serve warm with tortilla chips, sliced baguette, pita chips, or fresh vegetables.

   Variations & Tips

  • Make Ahead: You can prepare the dip up to the baking step and refrigerate it for up to 24 hours. When ready to serve, bake as directed, adding a few extra minutes if needed.​

  • Add Heat: For a spicy kick, add a pinch of red pepper flakes or a dash of hot sauce to the mixture.​

  • Cheese Options: Feel free to experiment with different cheeses like Gruyère or white cheddar for a unique flavor profile.​

  • Healthier Version: Substitute Greek yogurt for sour cream and use low-fat cream cheese to lighten up the dip.
